Modified Atmosphere Packaging
Modified atmosphere packaging is the process of using vacuum pumps to evacuate the air and oxygen from the packaging process during which the food product is vacuum packaged and sealed in a plastic over wrap package. Oil lubricated rotary vane vacuum pumps are the industry standard for MAP based packaging. The removal of air and gases from within and around the food allows for the introduction of specific gases that enhance the quality, shelf life and appearance of the product. Often the MAP process incorporates booster blowers with rotary vane vacuum pumps to speed up the process of air evacuation to increase the packaging speed.
