A sealed vacuum chamber allows products inside the chamber to have all the air and residual moisture in the air removed from the product. Not only is the vegetable, fruit dried in this evacuation product the removal of the oxygen stops the ripening process and provides for longer shelf life. In the industrial process there are many uses for vacuum chamber drying. The most popular is the transformer chamber drying prior to oil filling. Any moisture in the transformer or internal insulating materials will cause an electric short and explosion when used. The transforming products are left within the vacuum drying chamber until the air, moisture is totally removed before the oil is added.
